Pulled Pork in a Dutch Oven

Okay, this is a bit different than my standard cool shit but this recipe has become my go-to recipe when cooking dinner for friends and I have now gotten numerous folks onto its magic.

Ingredients

  • 2-3 lb Pork Butt Roast

  • Salt

  • Ancho Pepper (or something with a smokey kick)

  • ½ cup Brown Sugar

  • Garlic Salt

  • Seasoning Salt (Lawry’s or my favorite is Chard’s Blend Big Shooter)

  • 1-2 cups Stock (any kind will do)

  • 1 cup Apple Cider (pineapple juice works as a substitute)

Cut your pork into 2"x2" chunks. Preheat oven to 300 degrees F.

In a bowl, brown sugar, a heavy pinch of salt, ancho pepper, garlic salt, and seasoning salt.

Coat the pork in your seasoning blend and brown all your chunks in your Dutch Oven over medium/high. You’ll have to do this in batches.

Put all chunks in the Dutch oven and cover the pork with your stock + apple cider. Cover with lid and put in the 300-degree oven for 3 hours.

After 3 hours, turn up the heat to 400, remove Dutch Oven from the oven, and break up the meat with tongs. Place back in the oven for the last 30 minutes.

Enjoy! It makes a healthy portion and 10/10 recommend using the leftover for breakfast tacos.

I stumbled upon the Rebuilding Exchange about four years ago as one of my first places to explore when moving to Chicago, to find that it has recently become a newfound staple. For anyone looking to renovate or get creative with a DIY project, this is the place.

It’s a beautiful warehouse with the goal of repurposing as much construction waste as possible - it’s filled with everything from vintage toilets and tubs to stained glass windows, to all the reclaimed wood you could ever dream of. You could get lost in there for hours, but if you want to take it one step further they have woodworking classes for all levels. I’d highly recommend perusing the warehouse, but they post their best pieces on Instagram that can be held and picked up at another time for convenience.

TV Show: The Time it Takes (Netflix)

One cold night in April I decided that I wanted to watch a movie or series from Netflix. I was in the mood for emotional content- the type of content that makes your heart ache either of sadness or happiness. I was willing to do either. I stumbled with this Spanish indie series and I knew quickly it would be my favorite. What happens after 9 years in a relationship? What does grief look like? Why are memories so important to us? The cinematography and the method of going back to the past and present is something that caught my attention (and my heart)
